Where it all started

 

Dirk Peeters decided to train as a pastry maker, confectioner, and ice-cream maker at Ter Groene Poorte in Bruges at the age of just 14 years old. From the very beginning, he wanted to progress beyond a career as a traditional baker.

“I wanted to learn from the big boys. And so, once I’d finished my training, I took part in ‘Meilleures ouvriers de France’  – a contest to find France’s best craftsmen – and worked with Marc Debailleul and Wittamer in Brussels.  Throughout my career, I’d always longed to start my own business and I made that step in 1996 with Didess. “Initially, I worked on my own and was responsible for the production, packing, transport, and sale of my biscuits and cakes.” – Dirk Peeters

Didess’ traditionally produced, top quality specialities proved to be a great success in catering businesses all over Belgium.

Dirk continues; “With an average annual growth of 30%, my team after nine years consisted of 27 permanent staff and 15 temporary workers and our clients were spread out over the Benelux, France, Spain, and the United Kingdom.”

It will come as no surprise to anyone familiar with Dirk’s products to hear that his sublime dessert biscuits and cakes and unique Grand Decor Collection have won several international prizes.

Spongecake
Didess light and airy spongecake is ideal for garnishing beautiful desserts. Didess spongecake is delivered frozen and ready in plastic cups. Six different flavours are available; raspberry, pistachio, mocha, orange, almond and chocolate.

Crackers
Didess crackers are not made from prawns but from tapioca and are available in both sweet and savoury varieties.

We Love Biscuits

Yummy and original biscuits available in fun shapes and colours. These exclusive, unprecedented biscuits are made from fresh butter, almond
paste and free-range eggs. Indulge yourself into their outstanding flavour of raspberry, pistachio, chocolate and almond.

Gastronomic Biscuits
Didess freshly baked gastronomic biscuits are a delicious indulgence after dinner, served with coffee or tea. The bakers prepare these biscuits diligently and to an exceptional standard. Spoon after spoon, the biscuit dough is divided on baking trays so no two biscuits are the same. Quiche
Didess quiches are made in a traditional wooden ring which is manually filled with fresh, top-quality ingredients such as Sud’n Dol tomatoes, Breydel bacon, Boer Polle’s fresh goat cheese and Duvel beer. They use only the best fresh vegetables, cream and free-range eggs. The quiches are perfect for both brasserie and caterer.
